Out of the various noodles stalls I’ve visited thus far, I’d say Min Nan Pork Ribs Prawn Noodle has the best pork lard.
It may sound frivolous to recognise a stall for its pork lard, but it is always done just the way I like it when I visit: freshly-fried, fragrant, crispy… and that burst of oil upon biting is 😍
This stall was once featured on Buzzing Cashier many years ago and even managed to get a perfect 30 out of 30 votes from the tasting panel. But on my return trips to the stall, the standard has not been consistent - not too surprising given that the person behind the stove changes every now and then.
But still, it provides good value-for-money. For $5, you get a huge mound of mee pok with plentiful bean sprouts & kang kong stalks, 2 full shell-on prawns (sweet & fresh), 2 ribs of impressive size and a handful of their lard croutons (don’t be afraid to ask for more). A bowl of this in the morning typically lasts me till dinner.
Opinion is divided about the soup though - some find it a little weak, while I know of others who prefer it this way; subtle prawn flavours that’s not heavy on rock sugar and hence not overly sweet.
Having had this prawn noodles since my childhood days, it certainly brings back memories of 30 years ago. It'd be great if they could find some consistency with the person helming the stove...
