He has a new outlet at South Bridge Road, but I come here because I know he’ll be here.
I have always liked Mr Teo’s prawn noodles as he doesn’t skimp on the quality of his ingredients. He goes to the fishery port everyday after midnight to select the prawns for his eatery, and typically selects the best available even if they are pricier, simply because they taste better.
Plus that gentle and polite way he interacts with his customers (in spite of the perpetual queue) is really commendable.
Though prices start from $8 (there are also $12, $16, $20 and $25 bowls to choose from), you get 2 huge wild-caught prawns which are sliced down the middle such that the flesh can be picked out easily.
You also get some tender ribs sitting on a bed of noodles that has been well-tossed in his chilli sauce (I tasted a hint of ketchup in the mixture), plus a generous heap of fried shallots.
And the soup! Strong and umami with a slight herbal aftertaste. Very clean-tasting and not overly salty. 鲜甜美味😋
A queue of 5-6 on average is to be expected, but the experienced Mr Teo clears it pretty efficiently. Fun fact - Mr Teo has a twin brother (selling big prawn noodles as well at Adam Road Food Centre. Noo Cheng Adam Road Prawn Mee - another big name in the prawn mee circle. They share a very cordial relationship).
A worthy Michelin Bib Gourmand holder in my opinion. Well-earned!
