This has to be the most all-rounded wanton noodles I’ve had thus far, for it is strong in so many aspects.
Some places have a well-concocted sauce but mediocre noodles; some have beautifully-plump wantons but the char siew is… meh.

Well-caramelised exterior with perfect fat-to-meat ratio |
Here at Wen Kang Ji 文康記, the char siew is made using quality flap meat that is roasted on-site in an Apollo oven. Just check out the beautiful layers of meat & fat in the pic - it really tastes as good as it looks.

Al-dente noodles doused in a sweet-savoury sauce |
The noodles are of the thicker type and blanched to an al-dente firmness. When slathered with their lardy, slightly sweet-savoury sauce, plus a very bold sambal chilli, it is a powerful combination that can even be described as addictive.
The wantons are generously meaty, but I’d say their shrimp dumplings are even better - with strips of black fungus & a little shrimp lending a slight crunch to the well-marinated interior.
If I had to nitpick, the lard could have been crispier, and the soup was perhaps a little under-flavoured. At the moment though, it’s definitely one of the top wanton mee for me.
